    This is not how to make Thai green curry… your recipe is something else entirely. This is a very westernized approach. If you want to make Thai curry, you don't use oil – you use some coconut milk, reduce it and separate the oil out of it while thickening it. Then you add the paste, and fry the paste in the coconut oil. Then you add your chicken to seal it, you add in some broth instead of water, the rest of the coconut milk, some palm sugar, some fish sauce, etc. Then you cook the chicken for awhile and then add your vegetables. Lastly, there's no ginger in Green Curry – Thai people use Galangal, and it's not substituable.

    As an aside, you should cut the sugar snap peas, otherwise they will not soak up the curry flavours. The exterior is tough.

    This was so delicious, and best of all, even my son loved it! (One down, one to go. My daughter's a tough one.) Unfortunately they don't sell fresh lemongrass, or kaffir lime leaves around here, and also I'm not a fan fish sauce, however key limes & amino acids gave the dish a nice flavor. In the end, I garnished my bowl with a touch of chili paste to amp up the heat, which I thought nicely elevated the flavors. Yummm…

    I would call that Thai inspired or Thai style. Don't substitute ginger for galangal, it's a very different flavor. And don't cook lime juice, no matter what dish or cuisine you're making, it just gets bitter.

    The food Nazi's are out, all the way from Thailand. You'd think they have a patent/trademark on Thai Green Curry. Food evolves based on location, personal taste and allergies. Ingredient substitution therefore, is inevitable. Also, the chef clearly said it is Jamie's style and did not claim it was authentic Thai cuisine. Get a life people!
