Jen, looks delicious! Is that enough to feed a family of 4 adults (essentially?!) I assume your teen boys eat quite a large meal (as they should!!) do you also add greens or corn or bread or something?

Looks so easy and great for fall. It would be easiest to put all the chopped up veg and oil and seasonings in a big bowl, toss well and then arrange around the meat – will make this soon!

Hi Jen! Big fan here. Absolutely love all your videos and your cleaning routines have literally saved my apartment! I was wondering if you'd ever consider doing a written schedule of your cleaning routines? For us strange folk who love to put things like that on the fridge to work off of. Please don't ever stop posting!

Hi Jen, it looks delicious. I was wondering if I could substitute roast beef instead of pork and follow the same recipe? Thanks.
