    If you add a couple tablespoons of fresh milk half way through the cooking process the eggs even taste more fantastic. Not at the start or end half way through (roughly). RD

    To all who wonder whether to add milk or water to make your scrambled eggs fluffy: Yes, you will get fluffy eggs, but they will TEND to have a particular wetness to them because the milk/water DOES bleed out of the eggs in the cooking process. If you enjoy that sort of "wet" quality, or like your eggs extremely firm, that's perfectly okay, but for those who want a dryer "fluff", leave out the water/milk. Or try both ways to see which you prefer. Regarding the amount of butter to cook in — experiment and find what you like best; same holds true for how long you cook them (less time=creamier eggs, but you may not want that). But, low and slow, with gentle folding is the single most important tip Amy has shared. So, thanks, Amy, I wish there had been YouTube when I started cooking 40 years ago!!!!!
