I have been asked many times what’s a raclette?; Raclette is a delectable Swiss cheese dish (and cheese) that has been popular for centuries. Its origin dates back hundreds of years to when shepherds tended their herds in the mountains of Switzerland. Supplies were limited and meals consisted of cheese melted by the fire, then drizzled onto potatoes and pickles. From these humble origins the tradition of Raclette was born.

Mauviel M250 was the original line, the first one, the one chef’s in France are using since 1830; this is where Cuprinox started, that fine combination between stainless steel and copper. The benefit of Cuprinox is clear the conductivity if copper for fine cook timing along with the versatility of stainless steel. Thickness of these pots is 2.5mm; the heaviest on Mauviel.

Mauviel M150 refers to 1.5mm of thickness; the material is the same Cuprinox; however pans are not as heavy and not as expensive; the sacrifice is on the amount of copper. Here you’ll be able to find the same pots with cast iron handles (M150C), cast stainless steel handles (M150S) and bronze handles (M150B)

Certain specialty stores such as Williams-Sonoma carry a line with bronze handles and thickness ranging between 1.2 and 2.5mm depending on the piece.

My Mauviel post ends here; but I’d like to finish this post with a Video that caught my attention; it is from Danish chef Rasmus Kofoed preparing for Bocuse d’Or – the “world championship of cooks” – in Lyon, France, January 25th-26th 2011. Rasmus has already won the bronze and silver statuettes in 2005 and 2007 and is the only chef in the world to ever win more than once and participate more than twice!

The Right Juicer For You

It might be challenging shopping for a household juicer; there are so many options out there. I’ll try to summarize alternatives in the market; I’ll start by describing juicers by type.

Citrus Juicers. This one might be the easiest, pretty self explanatory is meant for fruits that can be easily pressed, such as oranges, grapefruits, lemons, limes, and tangerines; some manufacturers sell a citrus press attachment for centrifugal juicers. May be the most popular juicers on this category are OrangeX and Breville; both are sturdy machines with nice yields.

Centrifugal Juicers – Induction Juicers. These juicers use a shredding disc and a strainer basket with straight sides to hold the pulp; there is a variation called Pulp Ejectors; they work the same way, however they have a separate container where the pulp is ejected; you could say that the basket will go through a self-cleaning process.

Here you can find a wide range of quality brands such as Breville, L’Equip, Omega, Titan Gold only to name a few. Advantages on these juicers are that they can juice everything and will get high yield on soft fruits

Single Gear Juicers. These juicers rotate extremely slow thus nutrients in fruits are more conserved than those on a centrifugal juicer. Here you have a few choices: Samson and Omega, they defined the market. They do work with wheatgrass, with a small yield. Both launched a basic unit a few years ago and now they have launched the Advanced Series – GB-9004, GB-9005, GB-9006 – (in the case of Samson, difference on codes are different colors) and the 8004 and 8006, they feature a GE auger, stronger and more durable.

 

Vertical Single Auger. These juicers are a combination between a single gear juicer and a centrifugal one. Innovative and countertop saving unit; yield is high; on this category you’ll find Hurom, Omega and Breville juicers.

Twin Gear Juicers. These juicers are ideal for wheatgrass, they have the highest yield and save nutrients as well; one gear shreds and then press the juice out of the produce; screws run at low rps. Main brands here are Green Star, Green Power and Kempo among others. Differences on pricing will always be related to the number of attachments. The motor will be the same among same brands

Are capsule espresso machines good? illy & Nespresso

This is a question we usually received. The answer is simple, yes they are!!! absolutely. I have been on trainings in Los Angeles and Barcelona, Spain; the capsules are not only convenient but also easy to operate. You don’t need to guess or practice with the right grinder, the perfect roast or the machine itself.

There are two main leaders on this technology, the well known Nespresso system and the relatively new iperespresso system from illy. Both systems are fool proof; where quality is not an issue.

Nespresso espresso machines offer you a wide variety of espresso, they have on their assortment flavored coffees, lungos -large coffee, more water- decaf and many kind of roastings ranging from truly light to dark; illy on the other hand only works with medium roast, dark roast, lungo and decaf. In my view, illy is the closest to what you can get with a commercial machine; the espresso is amazing.

Now, what about cappuccinos and lattes; Nespresso have a device called Aeroccino, it produces decent foam, however it won’t ever be close to micro-foam, it gives you the opportunity to have foam and hot milk along with your espresso. illy machines with time will produce a foam closer to micro-foam, it won’t be the same result as the one you’ll get with one-tip or three-tip wand, but it’ll be close enough. Buying Capsules
Nespresso capsules can only be found at Nespresso stores or on-line in the Club-Nespresso; whereas illy coffee can be found on many web-sites and in some coffee stores.
